    I cooked a turkey upside down once by accident. It was the most tender turkey we ever had. Not as pretty … but more tender and juicy.

  14. I have several “secrets.” Brine first, Roast in a bag, and roast it breast side DOWN. the juices keep the breast moist. If you want brown, pretty turkey, remove it from the bag, put breast side up and brown before serving.

  26. I rub the entire turkey with butter, cover with foil (even if there is a lid on the roaster and then cook until about 45 minutes before it is done. Then remove the lid and foil—rub again with butter and finish cooking.
